Organic whole soy flour

1 package Active Dry Yeast
1 1/2 cups warm water (110°F)
2 tbsp. honey or molasses
1 tsp. Hain Sea Salt
2 tbsp. nonfat dry milk or dried soy milk
2 tbsp. Hain Vegetable Oil
1/2 cup Arhead Mills Organic Soy Flour
1/2 cup Arhead Mills Organic Raw Wheat Germ
3 to 4 cups Arhead Mills Organic Stone Ground Whole Wheat Flour
Pour water into a large mixing bowl and sprinkle with yeast. Allow yeast to dissolve (about 5 min). Add honey or molasses, salt, milk, oil, soy flour, wheat germ and 2 cups whole wheat flour, Continue to stir adding a little flour at a time until dough becomes stiff and pulls away from sides of bowl. Turn dough onto floured board and knead 10 minutes, until dough is smooth and elastic. Place in a greased bowl and let rise, covered, until the dough doubles in size. Punch down and shape dough. Place in oiled 9"x5" loaf pan and allow loaf to rise in warm place until doubled. Bake at 350°F for about 45 minutes or until golden bn. Cool on wire rack.
Cran-Apple Streusel Cake

Total Prep Time: 1 1/2 hours
Yield: 1-9"x13" Cake
1 1/2 cups Arhead Mills organic pastry flour
1/2 cup Arhead Mills
organic soy flour
1 tsp baking soda
2 tsp. baking powder
1/4 cup hain vegetable oil
1/2 cup honey
3 eggs or 3/4 cup liquid egg substitute
1/3 cup milk or WestSoy soy milk
1 tsp. vanilla extract
Filling:
2 medium apples, peeled, cored, and chopped
1/2 cup sweetened dried cranberries
1/4 cup walnuts or pecans, chopped (optional)
Combine the ingredients for the filling in a mixing bowl and stir together well.
Preheat oven to 350°F. Lightly oil a 9"x13" baking pan. Sift together flours, baking soda and baking powder. In a large bowl, beat together oil and honey. Beat in eggs or egg substitute. Add flour mixture and milk. Mix in vanilla extract. Pour batter into 9"x13" baking dish. Top with fruit mixture, pat it in, then sprinkle with the crumb topping mixture. Bake for 35-45 minutes, or until the fruit is tender and the crumbs are golden.
Topping:
1/4 cup wheat germ
1/2 cup instant oatmeal
1/4 cup hain turbinado sugar
1/4 cup butter
1 tsp. cinnamon
In another bowl, combine the ingredients for the topping with a fork or pastry blender until it becomes crumbly.
