Cornmeal Mountain Pancakes
1 Egg
1-1/2 cups Buttermilk
1 cup Whole Wheat Pastry Flour
1/2 tsp Sea Salt
1/2 tsp Baking Powder
1/4 cup Fine or Coarse Cornmeal
Mix together all ingredients until blended, then fry on a hot, greased griddle until golden bn, turning once. Serve with maple syrup.
Makes two servings.
