2-1/4 tsp. of Bob's Red Mill Active Dry Yeast equals 1/4 ounce or one standard packet of yeast. Put in a jar and keep refrigerated and it will stay active for many months.
;Buttermilk Rolls
2 Tbsp. Bob's Red Mill Active Dry Yeast
1 Tbsp. Sugar
2 cups warm Water (110-115ºF)
5 cups White Flour, Unbleached
4 Tbsp. Buttermilk Powder (Sweet Cream)
1 Tbsp. Sea Salt
3 Tbsp. melted Butter
Combine yeast, sugar and warm water and proof (10-15 minutes). Once yeast has proofed, add 2 cups of unbleached white flour. Then add salt, powdered milk and butter. Add remaining flour one cup at a time until dough is too stiff to stir. Then pour dough out onto a floured work surface and knead in remaining flour. Continue to knead for a total of 7 minutes. Dough should be supple, and have a satiny appearance. Place the dough in an oiled bowl and turn to coat. Cover and set in a warm place to rise until doubled in bulk, about 1-2 hours. Preheat oven to 375º. Pinch off pieces of dough and form rolls by rolling dough in lightly oiled hands. Place dough balls onto a lightly oiled baking sheet and bake 18-20 minutes. Serve warm. Yields 2 dozen rolls.
